Recipe: Colombian rice pudding

Welcome to our exciting cooking class designed for high school students! nueva lengua which we do every Tuesday after our Spanish classes! In this presentation, we will discover how to prepare the Colombian rice pudding that we have prepared on different occasions and that has become the favorite of students for its easy preparation and exquisite flavor. 

For our school, the main objective is to provide total immersion in Colombian culture, we start with the language, dances, cuisine and much more. Food is an essential part of a place's culture and a powerful tool of immersion. Our students seek authentic culinary experiences that allow them to connect with local culture. 

Today we bring you a classic Colombian recipe that is a true delight for the palate: rice pudding. This creamy and sweet dessert is perfect for any occasion and is sure to transport you to the streets of Colombia with every spoonful. So, without further ado, let's get to work!  

Colombian Rice Pudding: A Traditional and Comforting Dessert 

Ingredients: 

  • 1 cup of rice 
  • 2 cups of water 
  • 2 cups whole milk 
  • 1 cinnamon stick 
  • 1 cup of sugar 
  • 1/2 cup raisins (optional) 
  • 1 teaspoon vanilla essence 
  • A pinch of salt 
  • Cinnamon powder (to decorate) 

Instructions: 

Lets go cook! 

Step 1: Cook the rice 

We will start by preparing the rice. Rinse the rice under cold water until the water runs clear, which helps remove excess starch. In a large saucepan, add the rice and water. Bring to a boil and then reduce heat to low. Cook the rice over low heat until the water has evaporated and the rice is cooked, stirring occasionally. This should take about 15-20 minutes. 

Step 2: Add the milk and cinnamon 

Once the rice is cooked, add the whole milk and cinnamon stick to the saucepan. Cook over medium-low heat, stirring frequently to prevent the rice from sticking to the bottom of the pan. 

Step 3: Add the sugar and raisins (optional) 

When the rice has absorbed most of the milk, add the sugar and raisins (if you are using them). Continue cooking and stirring for an additional 10-15 minutes, or until the rice is cooked through and the mixture is thick and creamy. 

Step 4: Vanilla flavor and pinch of salt 

Add the vanilla essence and a pinch of salt. Mix well so that the flavors integrate. 

Step 5: Serve and decorate 

Remove the cinnamon stick and let the rice pudding sit for a few minutes before serving. Serve the rice pudding in individual cups or bowls, sprinkle with cinnamon powder on top for a touch of flavor and visual appeal.  

And there you have it! A delicious Colombian rice pudding that will surely make you feel like you are in warm Colombia. This dessert is ideal to enjoy hot or cold, so don't hesitate to experiment and find the way you like best! I hope you enjoy this recipe as much as I do.
