Ajiaco is one of the most emblematic dishes of Colombian cuisine, especially in Bogotá and in the Cundiboyacense highlands region. This soup not only stands out for its delicious flavor, but also for being a symbol of the cultural and historical wealth of the country, representing the fusion that defines Colombia.

One of the most interesting aspects of ajiaco is its combination of native and European ingredients. Local products include three varieties of potato (criolla, pastusa and sabanera), corn on the cob and guasca, an aromatic herb that is essential to the recipe. These native ingredients are part of the agricultural legacy of the indigenous peoples who inhabited the region long before the arrival of the colonizers.

This native base is complemented by ingredients of European origin, such as chicken, cream and capers, introduced to America during the colonial era. Capers, in particular, offer a distinctive touch, providing a note of acidity and salinity that balances the creaminess of the potatoes and the tenderness of the chicken.
