On Friday, January 13, 2023, we visited the Plaza de la Perseverancia, a place to discover Colombian gastronomy. Located in a popular sector in Bogotá, this plaza takes us to the historic Bogotá where peasants from towns surrounding the city used to meet to sell fruits, vegetables and animals, and which over time gave life to a plaza full of typical food. regional. Today there are more than 70 restaurants where we can find ajiaco santafereño, considered by many to be the best in Bogotá, bandeja paisa, llanera food, from the Pacific, and from many other regions of Colombia.

A curious fact about this square is that Netflix chose a restaurant in the Plaza de la Perseverancia to be part of the documentary street food, a series that shows the gastronomic culture of different parts of the world, emphasizing street food. Specifically in the chapter: Street Food: Latin America Plaza de la Perseverancia plays a leading role as a sample of Colombian gastronomy.

A special dish of this square is the mattress breaker, a seafood dish prepared by cooks from the Pacific that is quite popular for lovers of aphrodisiac food. So, we made this place a cultural activity that the students undoubtedly enjoyed and where they learned about Colombian history through its gastronomic flavors. Katrin Ref, a student from Germany, referred to this square as: “a magical place to learn about and taste Colombian culture from its gastronomic richness.” Also, Scott Cooper, a student from Canada, said that: "ajiaco is a traditional food that, apart from being very tasty, is very interesting because of its peasant and indigenous history."

Due to its traditional gastronomic offer, La Perseverancia was nominated for the "La Barra" awards, an organization that recognizes the best of Colombian gastronomy restaurants, in addition to the hospitality of its cooks and employees, this square is a mandatory place for visits both both city dwellers and tourists interested in good gastronomy.
