What is specialty coffee?

Specialty coffee or “specialty coffee” is a term for a category of high-quality coffee, characterized by its exceptional flavor, aroma and sensory profile. It is differentiated from commercial coffee by its careful selection of beans, sustainable growing practices, meticulous processing, artisanal roasting,

Another fundamental aspect is that it seeks to ensure that farmers and other actors in the value chain are recognized and rewarded for their work and dedication in the production of high-quality coffee.

A specialty coffee must meet the following characteristics; contain beans only of the Arabica variety, have a score of more than 9 points out of 80 according to an international system for quality evaluation. This score is given by a certified Q Grader based on Specialty Coffee Association standards.

Specialty coffees have clear traceability and it is important to report the following information on each of them: Origin: country and region, Producer: farm, cooperative or farmer, Variety of the grain, Height above sea level at which it was grown , benefit process, roasting notes and roasting date among other characteristics. A special coffee can be as sophisticated as the best of wines.
